Confession: I find a lot of my recipes on Pinterest.
I love to try making things that other people have tried!
I have lots of chicken, and I need to use up my red potatoes, so I typed in "Chicken Potatoes" into Pinterest. One of the results was this Italian Chicken, Potatoes, and Green Bean Casserole. Well, I'm from Minnesota, and we don't call anything a "casserole." Most people use the term "hotdish" around here. I like to use either that or "bake."
So this is now Italian Trio Bake.
Italian Trio Bake
You'll Need:
Red potatoes
1 can green beans
2 to 4 chicken breasts, depending on their size (I used 3)
Italian dressing

Thank you, Aldi!
Heat your oven to 350*
Cut up your potatoes.

I only ended up using 1 and a half potatoes because this is how huge they were:
Did the farmer forget to pull them from the garden? Maybe they're super potatoes, with magical powers... I could use some invisibility skills...
Ps. Notice my bracelet? It's a Crucian Hook bracelet, from the Virgin Islands. I've been in love with the VI since I was little, and I finally went in January 2015. Everyone I seen in St.Croix had one of these on, so I had to get one. Jim bought me this one in St. Thomas on our way back home. If the hook is facing towards you, you're taken. If it's facing out, you're single. Glady, mine is facing me, as I am taken by a wonderful man who takes me on my dream vacation and buys me a beautiful Hook bracelet. I'm spoiled.
I will blog about my St. Croix trip soon!

Pour your 1 can of green beans in your baking dish, like so:
Then your chicken:
Then your potatoes last:
Pour 1 cup Italian dressing over the chicken and potatoes. I poured it over the beans, too, and wish I hadn't. I like my beans just the way they are, nothing added. But if you like a little flavor in your beans, go ahead and pour the dressing all over the dish.
Bake for 1 hour and viola!

You have yourself a whole meal in one dish.
Next time I make this, I am going to try using an Italian dressing packet instead of the bottled Italian dressing. I think I would like that better. I might even try other flavors! Lemon pepper? Tomato sauce? The options are endless. Maybe even swap the beans for corn and give that a try, too?
Endless options, I tell you!
