Last night, I was on a mission.
I had ground beef thawing and ready to use. I am trying to cook with ground beef more often, because our freezer is full of it! We found an amazing deal on ground beef, and we have a lot to go through.
I also had a lot of egg noddles in the cupboard.
But I was craving taco's.
Now, I could have made taco's, but I only had 1lb ground beef thawed. If we are to have taco's for supper, I need at least 2lbs as James loves taco's and will eat as much as I make every time. There's never leftovers with that meal!
So I decided on Taco Noodle Hotdish! And it's a good thing I did...

So I decided on Taco Noodle Hotdish! And it's a good thing I did...
I used:
1lb ground beef
1 packet taco seasoning
16 ounces tomato sauce
4 handfuls egg noodles
1 handful shredded cheese
I heated the oven to 375. Browning the beef is the first thing I did. At the same time, I was boiling water for the noodles. Add the noodles to the boiling water. Cook the noodles until they are almost done, as they will cook more in the oven. Drain the ground beef of it's fat/grease, and add the taco seasoning packet along with the 16 ounces tomato sauce. Mix that all up nice. Add the noodles and mix some more. Pour this batch into a 9x9 greased baking pan. Smooth the top so it's evened out. Sprinkle the cheese on the top, and pop it in the oven for 20 minutes. Once I scooped out servings onto our plates, I added lettuce, sour cream (cough Greek yogurt), and tomatoes.
It was so good, and so filling. Gotta love a good hotdish!
