Preheat your oven to 450.
Brown 1lb of beef in a skillet.
While that's hanging out in the pan, chop up 1 onion.

Someday, I might try and figure out a recipe that doesn't involve "cream of" anything, but for now, I'm okay with this.

Some people do 2 cans of cream of mushroom. Some people do 1 can cream of mushroom and 1 can cream of chicken. Some people do 1 can cream of mushroom and 1 can cream of cheese...
I did cream of mushroom (of course!) and I wanted it to be a little cheesy. So I found the only cheese soup can I had, Fiesta Nacho Cheese. And I bet you, this hotdish will have never tasted better!
Some people also add veggies here, like corn or green beans, or peas. I prefer to serve them on the side, and so does James. But hey, sometimes I chose to add them... whatever!
Stir this mix with some pepper.

Pour the mixed mixture (yes, I just said that) into a pan. Now, I use a smaller pan because I split this recipe. I cook one now, and freeze some for later. I poured half the meat mix into this pan, and put the other half in a food container and stored it in my freezer. Later, I can thaw it and pour it into a pan and top with the tators.
