All this talk on Facebook about Pi Day has made me hungry.
For pie.
We have frozen apples in the freezer from the apple trees we picked them from last fall. I decided to dive into that stock pile today.
This is only the 2nd time I have made a homemade apple pie. And when I say “homemade,” I mean crust, filling, and all. If you look on Pinterest for ideas on homemade apple pie, you’d be amazed how many have store bought crust in their recipe! Well not here.
For the filling:
7 peeled and sliced apples
2 tablespoons flour
1 cup brown sugar
1 teaspoon salt
1 teaspoon nutmeg
2 teaspoons cinnamon
Put them apples in a bowl. You don’t need a big bowl for this step. Just enough for the apples.
Okay, now mix in the other ingredients.
Put that bowl in the fridge while you make the crust.
For the crust:
2 ½ cups flour
3 tablespoons melted butter
Dash of salt
8-12 tablespoons cold water
I have found that I need more water added to the mixture when it’s dry out. Must be a weather thing…
Mix all the ingredients together in a bowl, and then form into a ball. Wrap this ball in plastic wrap and let it sit in the fridge for about 15-20 minutes.
Then cut that ball into 2, one for the bottom and one for the top!
Spray your pie pan.
I put flour on my counter and on my roller so it doesn’t stick – this is an important step or you will encounter many problems!
Roll out one of the balls.
Once you have it rolled out enough to cover the bottom of your pie pan, form the dough into the pan.
I like to pinch the dough over the side so it stays better.
Now for a little extra flavor… I took caramels and dropped them on the dough. I told Jim that I had a “secret ingredient” added this time! Hehe. I only used 7.
Dump in your apples over the caramels. If you don’t want to add caramels, just skip that step.I like to take small chunks of butter and throw them on top for some flavor. Mmmm… butter.
Take your other ball of dough and roll it out til it’s big enough to cover your pie. Put it on top of the apple pie and pinch the edges together. I even made little cut designs on the edges with a knife.You have to make steam holes on the top. Usually, a few random holes do the job. I wanted to make an “S” for Jim’s last name. Ain’t I cute? Well, Jim thought it was.
I sprinkled some cinnamon and sugar on top, and put the pie in the oven at 400 degrees for 45 minutes. And boy does it make your house smell lovely.
I’m so ready for dessert. Happy Pi Day!
