James and I are trying to save money by not going out to eat. That's easy for us, cause we usually only went out to eat once a week. Now, we are slowing that pace down even more. I am trying to prepare supper during the day, so we cannot even come up with an excuse to go out. So far this week, it's worked!
Except we did have to go to town to get James fitted for a tux for a wedding he's in. And we did stop at the mall so I could get my favorite - Massad's. I couldn't help it! If we are in the vicinity of Massad's, we have to go.
Other than that mishap, we are staying in or grilling out.
The other night, I made Tator Tot Hotdish. I could totally go for that again.
Last night we had Chicken Kiev's from Aldi. Chicken Kiev's served over rice is by far one of my favorite super-easy-and-quick meals.

I used:
8 small russet potatoes (2 were not pictured, camera shy...)
1 onion
2 cups shredded cheese
2 cups cubed ham
1 can cream of chicken soup
The first step is to wash your tators. Then, of course, peel them.
Take your knife (I love my Forever Sharp knives!) and slice the potatoes into thin slices.
Dice up your onion.
To the crock-pot, add half the potatoes, half the onion, 1 cup cheese, and 1 cup cubed ham. Then repeat a layer using the rest of the ingredients.
Top the layered mix with 1 can cream of chicken soup.
